Well, we have been hard at work and so I though I would post a long due update.
Here's the cast parts so far. I still need to cast the lower leg, so I only have the one right now, but I plan to do more casting on Saturday, so I should have some more updates soon

I have to ask (I'm making an anthro pony BJD ^_^) does she stand? I've been in a vicious battle with leg styles for over a month now (and 9 totally different let types) and I've had to settle on a psuedo-digigrade style after by beautifully working double knee joints were just to ugly for me to work with. Your joints look so neat, does she stand? Are the knees double jointed?
